Ingredients for biryani rice

Basmathi rice – 1 cup

Bay leaves – 1

Salt

Ingredients For Frying Fish

Fish – 300 g

Red Chilly Powder – 1 tsp

Turmeric powder – ¼ tsp

Lemon juice – 1 tsp

Salt

Oil

Ingredients for Biriyani Gravy

Onion – 1 cup

Cloves – 4

Cinnamon Stick – small

Star Anise – 1

Bay leaves – 1

Ginger garlic paste – 1 tsp

Green Chilli – 1

Coriander powder – 1 tsp

Red Chilli Powder – ½ tps

Tomatoes- 1

Saffron – a pinch

Milk – 2 tsp

Salt

Oil

Method

Soak saffron in warm milk and keep aside.

Cook the rice 3/4 , the rice should not be soft, by adding bay leaves and slt.

Marinate the fish with all the ingredients and shallow fry the fish.

Heat oil in a pan add fennel seeds, cloves, cinnamon stick, star anise, bay leaves and fry for a minute.

Add ginger, garlic and chilly paste fry till it becomes brown and add onions and fry until it turns golden brown.

Put chopped tomatoes and fry for 2 more minutes and put chilly, coriander powder and fry till the raw taste goes off.

In a pot place the gravy and then layer the rice on top.

Put the fried fish and layer with rice and gravy and again with rice.

On top add the saffron milk and cover the a place and pour water on top of the plate.

In very low flame cook for 20 mints.
