Potato – 1 big
Shredded Cheese – for spreading
Cook the potato until you can easily poke them with a fork.
Mash the potatoes with a potato masher adding salt and pepper.
Beat the eggs until the yolks and whites are completely mixed.
Heat butter in a frying pan and add the mixture. Cook over low heat till mixture is firm and flip it and fry the other side.
Add the shredded cheese on the egg, cover and cook till the cheese melts.
Place the potato mix on one side and roll the egg omelette.
