Kuttivazhuthananga curry (Andhra Style)

Brinjal

Ingredients :

• Small violet brinjal – 1 / 2 k. g.
• Big onions – 2
• Tamarind paste – 2 tsp
• Turmeric powder – ½ tsp
• Coriander Seeds – 4 tsp
• Cummin Seeds – 2 tsp
• Red chilli powder – 2 tsp
• Salt
• Oil

For Tempering
• Cumin seeds – ½ tsp
• Coriander Seeds – ½ tsp
• Curry leaves – little
Method

Grind coriander seeds, cumin seeds, red chilli powder, salt, turmeric, tamarind paste into a paste.
Cut the brinjal from bottom side half way through and stuff the masala into the brinjal and keep it for 5 mints.
Heat the oil cumin seeds, coriander seeds and coriander leaves for tempering.
Add onion in pan and fry till it becomes brown then the balance masala into the pan.
Add the stuffed brinjal and a glass of water and cook till the brinjal becomes soft.
