Happy Vishu to all ……

Today the first thing we see is the Vishukanni.

And the traditional breakfast for Vishu is Vishu Katta with jaggery syrup.

Unakkalari – ½ cup

Thick or 1st Coconut Milk – 2 cup

Thin or 2nd Coconut Milk – 1 cup

Jeera – ½ tsp

Dry Ginger powder – ¼ tsp

Ghee – 1 tsp


Vishukatta jaggery

For Jaggery Syrup

Jaggery -1/2 cup

Water – ¼ cup

Soak the rice for 1 hour and drain the water

Heat the thin or 2nd coconut milk in a pan and add the soaked rice by adding salt.

Cook the rice in low flame till it becomes soft.

Add jeera, dry ginger powder and thick or 1st coconut milk to the rice and mix well.

Keep mixing till the rice starts leaving the sides of the pan.

Allow it to cool and in a pan grease ghee and spread the mixture into it.

Let it cool down and cut it into square.

For making the jaggery syrup, heat a pan and add jaggery, water and cook for 5 mints. The syrup should not be think. Sieve the jaggery syrup
