Today morning it was raining along with thunder and lightning. Looking out of the window and listening to the pitter patter sound of rain and the view of heavy clouds in the sky made me think of having a healthy soup.
Avocado – 1 (peeled and cubed)
Onion – 1 small
Coriander – a bunch
Lemon juice – 1 tsp
Vegetable stock/Water – 1 cup
Garlic clove (minced)– 2
Chilly powder – ¼ tsp
Butter/oil – 1 tsp
Add ½ tsp of butter to the pan and cook fry chopped onions for 3 mints and add avocado, coriander, lime juce and cook for 5 mints
Allow it to cool and using a blend it into a smooth paste.
In the same pan add the balance butter and fry the garlic
Add the avocado paste along with vegetable stock or water and chilly powder.
Cook over medium heat for 5 mints.
