Thai Mango Chicken

Thai mango chicken is a pan-fried chicken in tangy mango sauce.

Chicken (Boneless) –  250g

All purpose flour – ¼ cup

Coriander – ¼ cup (chopped)

Pepper Powder – ½ tsp

Water – 3 tsp

Mango Sauce

Ripe Mangoes – 2

Red Chilly – 1

Vinegar – 1 tsp

Soya Sauce – 1 ½ tsp

Red Chill Sauce – 1 ½ tsp

Lime juice – 3 tsp

Brown Sugar – 1 tsp

Ginger – 1 slice

Garlic – 3 cloves

Kaffir lime zest – 1 lime

Peel and slice the mango.

Blend all the sauce ingredients into a smooth paste.

In a blow mix flour, salt, pepper powder, coriander and coat the chicken in this mixture.

Heat oil in a pan and fry the chicken pieces till it turns golden brown.

Remove the chicken and set on paper towel.

In a clean pan add the mango sauce bring it to boil, then reduce the flame.

Once the sauce starts to thicken add the chicken and cook till it turns into sauce consistency.
