For all the TEA LOVERS this is a COOL SUMMER TREAT………
Chai (Tea) Ice Cream…
Heavy cream – 2 cups
Tea bags -6
Sugar – 1/2 cup
Pinch of salt
Ginger – 1-inch piece
Star Anise -4
Cinnamon sticks – 1
Cardamom – 1
Egg yolks – 4
Take half of the heavy cream and mix with 2 cup of milk.
Heat the mixture and add tea bags, ginger, chai spices, sugar, and salt.
Heat in low flame until the chai is well infused with the tea and spices.
Pour the remaining 1 cup of cold heavy cream into a bowl.
Remove the chai from heat and strain the mixture into the bowl of heavy cream and mix well.
Whisk the egg yolks.
Pour the yolks to the chai mixture in small amount whisking it quickly.
Heat the mixture for 5 minutes again till it gets thickens.
Allow it to cool.
Pour into a plastic or glass container with a tight lid.
Freeze for at least 4 hours.
