Thai Coconut rice with Prawns and Broccoli



Basmati Rice (cooked)– 2 cup

Desiccated coconut – 1½ cup

Prawns – 200 g

Broccoli – 200 g

Chilli flakes – 1½  spoon

Water – 2 cup





Blanch broccoli and keep it aside.

Slightly mash the cooked rice.

Boil 1½ cups of water and add it to the desiccated coconut and keep for 5 mints.

Heat oil in a pan add chilli flakes and salt and fry the prawns, once its medium cooked add 7 tsp of water and cook for 2 mints more.

Take out the prawns and in the same pan fry the blanched broccoli for few mints.

Now in the same pan add the desiccated coconut and ¼ cup of water and cook for 3 minute adding salt and a pinch of chilly flakes and add the rice and cook for a minute.

Add chilly powder and spring onions and fry for a minute.

Serve placing the prawns and broccoli.
